We stayed at the Hyatt Regency at Ka'anipali. As far as Ka'anipali goes, it and the Sheraton are the best hotels. It's crowded but pretty nice. There are three restaurants, all of them good. You can walk up the beach to the other hotels, snorkle, body-surf, and the area is close to everything (Lahaina, etc.).
